Catalogna stufata – Braised Chicory

Ingredienti:
1 ceppo di catalogna
1 spicchio di aglio
peperoncino, sale q.b.
2 cucchiaini di curcuma
olio extravergine di oliva q.b.

Preparazione:
Lavare la catalogna e tagliarla a pezzetti non troppo grandi. In una padella fate scaldare l’olio extravergine di oliva e fate imbiondire lo spicchio d’aglio tagliato a metà e il peperoncino. Aggiungere la catalogna e iniziate la cottura coprendo la padella con un coperchio. Continuare la cottura per 10-15 min aggiungendo a poco a poco mezzo bicchiere di acqua. A metà cottura, aggiungere il sale e 2 cucchiaini di curcuma.


 

Braised Chicory

Ingredients:
1 strain of chicory
1 clove of garlic
pepper, salt q.b.
2 teaspoons of turmeric
extra virgin olive oil q.b.

Preparation:
Wash the chicory and cut into pieces not too large. In a pan heat the olive oil and then brown the garlic clove cut in half and the chili. Add the chicory and start cooking by covering the pan with a lid. Continue to cook for 10-15 minutes gradually adding half a cup of water. Halfway through cooking, add the salt and 2 teaspoons of turmeric.
