Per la pasta brisè:
300 g farina 00
150 g burro
50 ml acqua
1 pizzico di sale
Per il ripieno:
1 kg mele
100 g zucchero
1 limone (il succo e la scorza)
1 cucchiaio di cannella
1 cucchiaino di zenzero
1 pizzico di noce moscata
1 cucchiaio di farina

Preparazione:
Per prima cosa preparate il ripieno. Sbucciate le mele, togliete il torsolo e tagliatele a piccoli pezzettini (1). Mettete le mele tagliate in un contenitore, dove aggiungerete il succo e la scorza di un limone, lo zucchero, la cannella, lo zenzero, la noce moscata e la farina (2) . Preparate la pasta brisè, impastando insieme la farina, il burro a pezzettini e a temperatura ambiente e l’acqua fredda (3/4), finchè non otterrete un composto liscio e ben compatto (5). Avvolgete l’impasto nella pellicola trasparente e fatelo riposare in frigo per almeno 30 minuti. A questo punto dividete la pasta brisè in due parti e stendete una metá su un foglio di carta forno e adagiatela sul fondo di una teglia (7). Bucherellate la pastá brisè con una forchetta e versate il ripieno di mele (8). Stendete anche l’altra metá di pasta brisè (9) e posizionatela sopra il ripieno, bucherellando la superficie con una forchetta (10). Chiudete bene i bordi, in modo da non fare uscire il liquido durante la cottura (11) e spennellate la superficie con un tuorlo d’uovo sbattuto (12). Infornate per circa 50/60 minuti a 180 gradi (13/14).


American Apple Pie

Ingredients:
For the brisè dough:
300 g flour 00
150 g butter
50 ml water
1 pinch of salt
For the filling:
1 kg apples
100 g sugar
1 lemon (juice and zest)
1 tablespoon of cinnamon
1 teaspoon of ginger
1 pinch of nutmeg
1 tablespoon of flour

Preparation:
First peel the apples, remove the core and cut into small pieces (1). Put the apples in a bowl and add the juice, the zest of one lemon, sugar, cinnamon, ginger, nutmeg and flour (2). Prepare the brisè dough, mixing together cold water, flour and butter at room temperature cut into small pieces (3/4). Continue to mix until you get a smooth and well compacted dough (5). Wrap the dough in the plastic wrap and let rest in refrigerator for at least 30  minutes. Then, divide the brisè dough in half and roll out a half on a sheet of parchment paper (6) and place it on the bottom of a baking tin (7). Prick the dough with a fork and put inside the apple (8). Roll out also the other half of dough (9) and place it over the filling and prick the surface with a fork (10). Close the edges, so as not to release the liquid during cooking (11) and brush the surface with beaten egg yolk (12). Bake for approximately 50/60 minutes at 180 degrees (13/14).

  2. I have a wordpress blog and I would like to remove everything (it’s hosted on my own domain and hosting) because I would like to delete my site. How can I save my blog posts in a folder or something in my documents (offline) because I don’t want to delete everything completely. Can I do that in one go, if I can even do it ? Thank you !.
