Latterino fritto

Il Latterino è un piccolo pesce che vive in banchi in prossimità degli estuari. Caratteristico è il suo colore argenteo, la sacca che contiene le uova è di un argento vivo molto bella. Ha una lunghezza massima di 15 cm. Ne esistono 3 tipi nel Mediterraneo: oltre all’Atherina mochon c’è l’Atherina hepsetus e l’Atherina boyeri. Ingredienti per 2 persone:
300 gr di Latterino
farina di grano duro q.b.
Olio per friggere (consigliamo l’olio d’arachidi)
sale

Preparazione:
Pulite e lasciate asciugare il latterino (1). In una ciotola versate un po di farina ed infarinate bene il latterino (2). In una padella portate a temperatura l’olio per friggere e versatevi il latterino infarinato (3). Dopo qualche minuto servitevi di un piatto per girare il tutto, e continuate la cottura per qualche altro minuto (4).
Salate e servite caldo.

Ingredients for 2 people:
300 grams of Latterino
durum wheat flour
Oil for frying (we recommend peanut oil)
salt

Preparation:
Clean and let dry Latterino fishes (1). In a bowl, pour a bit of flour and flour well the latterino (2). In a pan, bring the oil to fry temperature and put inside the latterino (3). After few minutes help yourself with a plate to turn it off, continue cooking for a few minutes (4).
Salt and serve hot.
