Ingredienti per 4 persone:
350 gr di semola di grano duro
170 ml di acqua
un pizzico di sale

Preparazione:
Mettere la semola, il sale e l’acqua nell’impastatrice.  Avviare l’impastatrice utilizzando la frusta K per qualche minuto; appena il composto assorbe tutta l’acqua ed assume una forma grossolana, inserire il gancio impastatore; continuare per altri 5-10 min. Formare una palla e lasciare riposare l’impasto per mezzora. Per fare la pasta ho utilizzato il torchio con la relativa trafila in bronzo, ma nulla vieta di utilizzare i metodi tradizionali.

350 grams of durum wheat
170 ml of water
a pinch of salt

Preparation:
Put the flour, salt and water in the mixer. Start the mixer using the whip K for a few minutes. As soon as the mixture absorbs all the water and assumes a gross form, insert the dough hook, continue for another 5-10 min. Form a ball and let it rest for half an hour. To make the pasta I used the press with its bronze die, but traditional methods are always recommended.
